Immediately after Italian coffee beans are ground, they begin to lose some of the most precious elements that make a good cup of coffee great. Once lost, these volatile oils, aromas, flavors and other chemicals are gone, never to return, never to come out in your cup, never to be tasted and smelled as you drink your cup of coffee or shot of espresso.
Oxygen is the enemy of ground coffee. Oxygen is a corrosive element. It is what turns fresh ground coffee full of aromas into stale, bland coffee that can barely emit a scent or taste sensation. If you buy your coffee preground, the bag may be vacuum packed, but once you open the bag oxygen will begin to degrade the coffee even in an airtight container.
It is because of this and many other chemical changes and shifts in the ground coffee that fresh grinding, moments before brewing, is critical to the production of a great cup of coffee.
Espresso pods were developed for Cafés and restaurants to simplify and speed-up espresso production. Espresso pods are single servings of ground espresso that are placed into a paper coffee filter which fits into the coffee handle of your espresso machine. Simply place an espresso pod into the coffee handle, brew your coffee, and then remove and discard the spent pod. No grinding, no measuring, no tamping, and no mess. They allow anyone to consistantly brew a great cup of espresso making them ideal for home and office use.
Espresso pods are specially manufactored to insure freshness. Pods are a disk of roasted, ground, measured, and compressed coffee, enclosed between two sheets of filter paper and sealed in a foil pouch that has been flushed with nitrogen. By keeping the oxygen out of the package you can store these pods for 8 - 12 months.
